Nana Anders’ Chocolate Chip Oatmeal Pie

One of my favorite scenes in His Brother’s Atonement is of little Jayson welcoming family into his home for Thanksgiving and being so excited about the chocolate chip pie he had made with his nana!

The chocolate chip pie was inspired by my favorite of my dad’s pies, oatmeal pie. It sounds nowhere as awesome as it is, especially when Dad adds chocolate chips to it! With a salted butter crust, a taste and texture that reminds me of coconut pie but so much better, and then the specks of melted chocolate, it is amazing!

My dad is a great baker. It’s a good thing we were always outside running around growing up because it seems like he baked a dessert every night! Much like me, Dad adds his own spin on recipes and doesn’t always use measuring cups. Somehow everything turns out so good!

Today when I called my parents to get the recipe, he had just served this very pie to my brother’s family! So we have a photo fresh out of the oven!

This recipe mainly comes from a very old Pennsylvania Grange Cookbook. A lady named Marie Biddle entered it.

Chocolate Chip Oatmeal Pie

2 eggs

½ cup white sugar

½ cup brown sugar

¾ cup white corn syrup

½ cup melted butter

¾ cup quick oatmeal

1 cup milk

2/3 cup coconut

½ cup chocolate chips

1 teaspoon vanilla

Beat eggs, sugars, corn syrup, and butter in a mixer for 2-3 minutes.  Add oatmeal and milk and beat for one minute.  Add coconut, vanilla, and chocolate chips.  Pour into unbaked pie shell.  Bake until brown and thick. 

Cooking time: 45 minutes            Temp:  350 degrees F                     Servings: 6

Some people have not wanted to try this pie. Some weren’t fond of oatmeal or coconut. Some just thought it sounded boring. But I can almost guarantee that you will love it as much as Jayson did in my first Whispers from Wyoming novel!
